A long time Travailian, chef Kale Thome recently started Minnesota BBQ Co. featuring smoked meats, classic sides, and all the fixins. As he works with our own James, Mike, and Bob to open a new location in NE Minneapolis, he's smoking and cooking his barbecue out of the Travail kitchen and serving it up at local breweries. SMOKED MEATS & FIXIN'S
Kale's serving up smoked ribs, brisket sandwiches, smoked duck, half chicken, apple bacon sausage, slaw, baked beans, house made pickles, and a sweet and savory sauce to top it all off. Look for that great crusty bark on his brisket and watch the meat fall off the rib bones. This Kansas boy knows his stuff, and is helping put Minnesota on the barbecue map!

LOCATION & INFO
Currently our BBQ is prepared out of the Travail kitchen in a catering capacity and served at local breweries. We are working on a new home in NE Minneapolis to open (sooner than later!) in 2018.
