Travail's kitchen boasts a ton of talent, and it's about time you got a little flavor of what some of these guys and gals can do solo! Spotlight is a new concept in which one of our emerging chefs will take over the Rookery kitchen, crafting their own menus and dining experience for a two month period.


The next emerging chef in our Spotlight series is Nate Stefanski, otherwise known as “Fancy” or “F$$” in our kitchen. You may have seen him brilliantly sporting the Red Power Ranger costume at our Halloween party, or perhaps this bandana-wearing jokester has been your trusty server in-house. He’s a two and a half year Travail vet after completing culinary school here in Minnesota and cooking with Solera and Hautedish.  If you haven't had the opportunity to try a Fancy dish, now's your chance! Chef Nate is looking forward to being in the Spotlight throughout January and February. Let's start off 2017 with some great food and fun vibes!


Chef Nate's menu will feature Asian-inspired plates, and will reflect his influences growing up in upper Michigan and his experiences as a chef here in Minnesota. Among many talents, Nate has specialized in fermentation, so you can expect tons of killer veggies and small touches of pickled ingredients among hearty, savory flavors as part of this winter menu.

Join us for the evening at our new 16 seat diner bar surrounding the Rookery kitchen. Your ticket will cover an 8-10 course dinner, and drinks will be available for additional purchase at the restaurant. Tickets are $50 per person plus a service fee (tax, gratuity, and a small processing fee). We currently have two seating times each night, Wed-Sat.
