Travail's kitchen boasts a ton of talent, and it's about time you got a little flavor of what some of these guys and gals can do solo! Spotlight is a new concept in which one of our emerging chefs will take over the Rookery kitchen, crafting their own menus and dining experience for a two month period.



The next emerging chef in our Spotlight series is Nelson Cabrera. If you've visited us here at Travail, you've probably seen him drumming to the beat on the kitchen counters, or delivering a cocktail with a hefty side of comedy at the Rookery bar. He's brought his happy-go-lucky 'tude and mad cooking skills to this restaurant for over five years now, and he's looking forward to being in the Spotlight throughout October, November, and December.

Chef Nelson calls his Spotlight restaurant Sololá, alluding to his Central American roots. Born in Guatemala and raised in Miami and the Twin Cities, he will be serving up a menu of Latin fare with a Midwestern flair. His courses reflect the food he grew up with, which have been a huge influence on his collection of flavor profiles as a chef today. 

Here are a few examples of what you might be served at a Sololá dinner:
+ Tamales
+ Pupusas
+ Ceviche 

And here's a taste of what you might find on his a la carte menu at the bar:
+ Elote
+ Tres Leches Doughnuts
+ Burger and Fries (because what's the Rookery bar without a burger?!)


Join us for the evening at our new 16 seat diner bar surrounding the Rookery kitchen. Your ticket will cover an 8-10 course dinner, and drinks will be available for additional purchase at the restaurant. Tickets are $50 per person plus a service fee (tax, gratuity, and a small processing fee). We currently have two seating times each night, Wed-Sat.
