Travail's kitchen boasts a ton of talent, and it's about time you got a little flavor of what some of these guys and gals can do solo! Spotlight is a new concept in which one of our emerging chefs will take over the Rookery kitchen, crafting their own menus and dining experience for a two month period. So from March through April, Chef Nate Moser will be in the spotlight, serving up the best Pub Fare of his dreams! He's putting together a menu of all his favorites, take a look at what he's got cooking:
Scallop Crudo with apple, topico, and yuzu.
Pork Riat with pickles and pretzel crackers.
Cacio e Pepe Spaghetti with parmesan, butter, and black pepper.
Coconut Panna Cotta with hearts of palm and chocolate.
