a taste of Guatemala with chef nelson: April 25 - 27

If you’ve followed Travail the past few years or dined with us in the early days of The Rookery or Pig Ate My Pizza, odds are, you've met Nelson. Currently our Chef de Cuisine of events, Nelson is a creative force in the kitchen, a skilled bartender, and the spirit of the whimsy that is Travail. 

When asked, “What food makes you the happiest?” Nelson immediately said Guatemalan Cuisine. Guatemalan food is a hidden gem, not widely recognized and it’s Nelson’s favorite because it’s the food of his family.

Nelson travels to Guatemala twice a year to visit his father, and the trips have truly shaped Nelson’s culinary perspective and love of cooking. It's a cuisine born out of necessity, where making the most of what you have is not just a culinary practice, but a way of life. With influences from Mexican flavors and a deep-rooted tradition of utilizing locally sourced ingredients, the cuisine embodies simplicity, rusticity, and an appreciation for what nature provides.

Join Chef Nelson for a Guatemala dinner series, April 25 - 27 in our Sky Lounge rooftop. Expect home cooking in an intimate setting featuring an 8-course Travail-style Guatemalan tasting menu with some Mexican influence. Plus, cocktails, after dinner coffee and toasts by Nelson.

Tickets start at $159 per person with seatings at 5:15 pm, 6:30 pm and 7:45 pm.

All three of our owners Mike, Bob, and James have kids about the same ages, and those little ones have made many appearances in Travail's kitchen. As they've grown older their curiosity for cooking and what their dads do at work has increased, which inspired us to put together our first-ever kids’ cooking class! Hosted on the third-floor indoor/outdoor rooftop our chefs will guide you and your kid chefs through three interactive cooking stations.

Hosted on our third-floor indoor/outdoor rooftop, our chefs will guide you through three interactive food stations where you’ll make sushi with dipping sauces, homemade pasta, and a special dippin’ dots dessert with liquid nitrogen. Our chefs will also prepare a steak course and flambé dessert with homemade ice cream for you to enjoy. Additionally, you’ll receive take-home recipes to recreate these dishes at home. Beverages are included with your ticket, and we’ll have a full la carte beverage menu available. Bring your apron and prepare for some cooking fun with Mom this Mother’s Day!
